Simple Bread dough

This is a simple general bread recipe that can be used for loaves, rolls, flat breads like Focaccia, pizza bases etc. The amount you need can be easily adjusted up or down in the same proportions of flour to water (2 to 1). This gives you about 500g

 

300 g flour
1 tsp salt
150 ml warm water
A packet of instant Yeast
Olive oil

I use the dough hook on a Kenwood Chef to make this but you can mix it and knead it by hand if you don't have one of these.

Put the flour, yeast and salt into a bowl and mix them together. Add the water slowly to the flour while mixing (the dough hook gets clogged with wet dough if you don't do this slowly). It will be a bit dry at this point so drizzle in olive oil into the mixture until you get a nice soft dough. If you are mixing by hand this is the point you get it out the bowl and start kneading until you have an evenly pliable ball of dough. Put it back in the bowl cover it with a damp cloth or cling film and let it sit there until it doubles in size (around 20 - 30 minutes)

Knead it again until it is the same as the starting consistency and then make it into whatever shapes you want to use it. Let it stand for another 15 minutes to rise again and cook it in a pre-heated 180C oven Take it out when nice and golden on top.
