Ricotta Cheese

Don't buy ready made Ricotta/Paneer when it is easy to make for yourself

What you need:

2 L fresh full cream milk
250ml fresh cream
80 ml Lemon Juice (Fresh Lemon Juice from a bottle is fine - or the juice of 2 - 3 lemons)
1 - 2 teaspoons of salt to your taste

In a saucepan add the milk, cream and salt and bring to the boil. Switch off as it boils and add the lemon juice and give it a swirl with a spoon. The milk will curdle which will be your Ricotta. Leave it to stand for around 10 minutes. Do not be tempted to stir it while it is standing as this will break up the curds.

Over a large strainer over a large bowl and put muslin/cheese cloth/a new one of those blue/pink/green/yellow dishwashing cloth off the roll of cloths in to the sieve and strain the liquid through it. The Ricotta will be left behind in the strainer and the thin whey will be in the bowl. Leave to drain for a few minutes until the cheese is of a consistency you like. Do what you like with the whey - my dogs love it in their food or you can discard it
