
Finding good mustard is difficult unless you are on good terms with your bank manager. Give this a try (look in your local Indian spice shop for the mustard seeds)
Ingredients
½ cup yellow mustard seeds
½ cup yellow mustard seeds
¼ cup brown mustard seeds
½ cup apple cider vinegar
½ cup pale ale/corona or water
1 tbsp dark brown sugar or apple puree
2 tbsp honey
½ tsp salt
Soak the seeds in the vinegar, pale ale/ water overnight in a covered container. To a blender add the mix with the sugar, honey and salt and blitz until you get the texture you prefer. Let stand for about a week before use.
TOP TIPS! I take out a third of a cup of the seeds before blitzing and add them back afterwards to have a course texture amongst the creamy bits. The brown mustard seeds are spicier so you can add more or less of them as you like. To make jalapeno version, replace the pale ale/ water with the same amount of brine from a bottle of pickled jalapeno’s
